Ingredients
2 lbs Uncooked pasta - I like Trader Joes Artisan pasta Gigli
1 qt cherry tomatoes , halved
2 cans garbanzo beans
6 ounce bag arugula
8 persian cucumbers, sliced thinly
1 cup chopped fresh parsley
1 cup chopped fresh mint
1/2 cup basil, thinly sliced
1 cup pepitas
Dressing
1 cup oilve oil
3/4 cup lemon juice
1 healping Tablespoon dijon mustard
8 large garlic cloves minced
1 Tablspoon Pampered Chef Herbs de Provence
1/2 cup crushed red pepper flakes
1 tsp sea salt
Instructions
Bring a large pot of saltred water to a rolling boil. Add pasta and cook until soft.
Drain and rinse garbanzo beans and cook in air fryerr until crisp and golden brown, set aside
comsbine salad ingredients and whisk or shake until well combined
Drain Pasta and cool to room temperature
in a very large bowl combine all ingredients , except Nuts and garbanzos. Add dressing and let sit for 10 minutes. add nuts and Garbanzos and toss gently.
